How can we understand the taste quality of Extra virgin olive oil?
Fruity
Let’s not forget that olives are fruits so good olive oil needs to have some degree of fruitiness. This usually comes from unripe (green) fresh olives. Olive oil should taste fresh, not heavy, or “oily”.
Bitter
Yes, bitter is good. Bitterness is a characteristic of fresh olive oil. Olives are bitter. The degree of bitterness depends on how ripe the olive is. So a bitter olive oil is a positive thing.
Pungent feeling
This is a peppery characteristic that you will feel at the back of your throat when you swallow the oil. You may even cough. Many people think this is bad but it is not!
Therefore it indicates a fresh high-quality extra virgin olive oil. This feeling is caused by the presence of the magic polyphenols and certain antioxidants. And remember this peppery sensation should go away fairly quickly. If it lasts for a longer period and the aftertaste is like fat, butter or burned oil then this oil is surely damaged of high acidity.
